Colombia (Burbujas) Washed Mossto Fermentation

This standout Colombian coffee comes from the Aguablanca Wet Mill Project in Valle de Laboyos, Huila. A modern, expressive lot that shows just how exciting washed coffees can be when fermentation is handled with intent. A nod to our co-ferment from Kenya, but with the African coffee being a natural process, one we just had to get hold of as more and more of you are asking for interesting cups!

Here the farmers are using a washed Mossto hybrid fermentation, delivering depth without heaviness. Think wine-like fruit, layered sweetness, and a clean, structured finish, particularly adept on filter - v60, percolator, Ratio Six, AeroPress...

On filter, it really opens up and pomegranate and yellow plum hits the palate!
Bright with a soft red fruit sweetness, and a crisp, elegant wine-like finish. Lively but controlled due to the washed element.

On espresso, it’s bold body and glupey palate feel really hit the spot. Heavy on the plum and black cherry gives it that sweet acidity giving it a juicy and robust flavour - our recommendation on espresso is drink on a long black!

If you like fruit-forward coffees that feel polished rather than wild, this one will hit the mark.
